Holiday Fun - Part II

...Now, with Uncle Alex! Christmas dinner on the 26th was a standing rib roast, slathered in a zesty paste of garlic, rosemary, thyme, evoo, s&p, and roasted low and slow for about 4.5 hrs. Despite the initial impression that this piece of meat was MUCH too large, it was so delicious we took it down in just one night and three days of leftovers. It made *amazing* roast beef and horseradish on toast.

I thought I was being very clever using Amex points to rent a mini-van to get us around town as a family this year... Well, I guess it was still clever. But the weather left us with only two opportunities to actually cash in on this brilliant idea: 1) an afternoon stroll at the Portland Art Museum, and 2) Sunday dim sum on SE 82nd Ave with a side trip to Fubonn Market. The rest of the time, we just holed up inside, enjoying each other's company. Everyone made it out safely and pretty much on time on Monday morning, leaving poor little Hope in some serious grandparent/uncle withdrawal for the afternoon. Guess that means they'll have to come back and visit again soon! Happy Holidays - NB&H
